The Esquebec chili pepper is the result of in-house crossbreeding.
Since its beginnings in 2021, it has been predominantly grown without pesticides using hydroponic methods.
Additionally, in 2023, field cultivation tests have been conducted following organic standards, although certification hasn't been pursued.
The Esquebec chili pepper comes from one of our chili genetics developed at Épices pour toi (Spices for You). This unique-tasting powder was created as a result.
The cultivation of Esquebec chili peppers begins with planting in coconut fiber during the last full moon of February, known as the "Lion Moon," around mid to late February in our greenhouse.
The plants are then repotted and moved outdoors when the risk of ground frost has passed and the average daytime temperature is above 11°C (51.8°F).
The harvest extends from mid-July to the first frost. Only selected fruits are washed, deseeded, dried, and ground into powder.
The highest grinding standards are upheld to preserve the product's aromas and achieve a fine texture.
The powder is then mixed with 3% rice husk powder to maintain its flow until your usage. A quick tap of the jar on the counter and it's ready to sprinkle.
The Esquebec chili pepper powder is capable of gently awakening your taste buds, with an estimated Scoville scale rating of 1500-2000 SHU. Esquebec is used to enhance the flavors it accompanies. It doesn't overpower dishes but adds complexity and depth. The choice to taste is yours! Due to the limited annual production of Esquebec chili peppers and the optimal manual processing it undergoes, make sure to reserve your jars promptly for the year. Once it's gone, you'll need to wait for the next batch, which will be available around September 2024, to taste Esquebec powder.
